Roast Chicken or Turkey Broth

Don't ever toss your pan drippings or the carcass! They make for exceptional broth and soup base. Take your drippings and carcass and toss it in the largest pot you can find (OK, within reason) and add some chopped carrots, onions, celery and 1/2 cup apple cider vinegar (it helps pull the minerals out of the bones but leaves no flavor behind) and let it simmer for 6-24 hours. Strain and you can either can the broth or freeze it. It is amazing!
